SHIRLEY'S EASY SHORTBREAD COOKIES

Add this cookie recipe to your next cookie exchange!
 
INGREDIENTS:
1 cup butter
1 cup margarine
4 cups cake flour or 3 cups all-purpose flour
1 Tbs vanilla
1 ¼ tsp Rick’s Rub Original seasoning
¾ tsp Rick’s Rub Heat seasoning
 
METHOD:
 
  1. Preheat oven to 350F
  2. Blend butter and margarine well
  3. Add vanilla
  4. Add sugar and blend well
  5. In a separate bowl, combine flour, Rick’s Rub Original and Rick’s Rub Heat. Stir in flour mixture to wet ingredients, until dough is quite stiff
  6. Roll into balls with your hands, place on a baking sheet and press down with a fork
  7. Bake for 15 minutes or until golden brown
 
Makes 6 dozen cookies

RICK'S RUB ORIGINAL ORANGE AND HONEY CHICKEN

For a sweet, spicy, and saucy meal that everyone will enjoy.
 





INGREDIENTS:
2 chicken breasts, cubed
½ can frozen orange juice concentrate
¼ cup honey
Red or orange bell peppers, in 1 inch pieces
½ tsp Rick’s Rub Original seasoning
½ tsp Rick’s Rub Heat seasoning (use less if desired)
Minced garlic or ginger, if desired
 
METHOD:

  1. Preheat pan on the stove. Brown chicken pieces, then add bell peppers and allow to sauté
  2. Sprinkle Rick’s Rub Original and Rick’s Rub Heat seasonings over chicken and peppers to incorporate flavor
  3. In a separate bowl, mix together orange juice concentrate and honey until combined, then pour over ingredients in the pan
  4. Allow to simmer until sauce has thickened. Season to taste
 
Serve over steamed rice with a side of vegetables.

RICK'S RUB ORIGINAL PULLED PORK SLIDERS

For this easy pork sliders recipe, use your slow cooker to come home to a hot meal with minimal preparation.
 





INGREDIENTS:
2 pork blade steaks
1 Tbs Rick’s Rub Original seasoning
1 onion, sliced
Your favourite BBQ sauce
 
METHOD:
  1. Put the sliced onions into the bottom of the slow cooker liner
  2. Rub the pork steaks with 1 Tbs of Rick’s Rub Original seasoning and place pork steaks on the bed of onions
  3. Cook on low for 8 hours (or high for 4 hours)
  4. Take the pork out of the slow cooker and remove any bones or excess fat. Shred the meat into bite-sized pieces with a fork
  5. Remove the liquid and strain out the onions. Put onions back into the slow cooker with the shredded meat. Coat the meat and onions with your favourite BBQ sauce and make the meat as saucy as you like!
  6. Cook in the slow cooker for another 10 mins, to heat the BBQ sauce
 
Serve with coleslaw on a crusty bun

CRUNCHY CHICKEN FINGERS WITH RICK'S RUB ORIGINAL

Try this crunchy chicken finger recipe when you want just the flavourful crunch,
nothing fake from a packet. It's so easy, the kids could help!









INGREDIENTS:
4 chicken breasts, sliced into tenders
4 cups corn flake cereal, crushed
2 Tbs Rick’s Rub Original seasoning
½ cup butter, melted
¼ cup parmesan cheese, grated
 
METHOD:
  1. Preheat oven to 400F
  2. Mix crushed corn flake cereal, parmesan cheese, and Rick’s Rub Original seasoning in a large mixing bowl until all ingredients are evenly distributed
  3. Melt butter in shallow dish, for dredging the tenders
  4. Dredge chicken tenders in melted butter, then in bowl with dry ingredient mixture. Press larger corn flakes into tenders. Place tenders onto rack over prepared baking pan, or on broiler pan
  5. Once all tenders are seasoned and breaded, bake at 400F for 25 mins or until internal temperature reaches 165F. Remove from oven and place on warmed serving tray
 
Serve with steamed vegetables and rice with your favourite dipping sauce!

RICK'S RUB ORIGINAL ROAST BEEF DINNER

Get the classic roast beef flavour and beautiful gravy without the fuss of mixing spices. Serve this to your guests next Sunday!
 




INGREDIENTS:
2lb oven roast beef
2 tsp Rick’s Rub Original seasoning
 
METHOD:

  1. Preheat oven to 450F to oven-sear the roast
  2. Rub 2 tsp Rick’s Rub Original seasoning over whole roast, making sure to cover evenly
  3. Place roast in roasting pan into preheated oven for 10 mins
  4. Reduce heat to 275F and cook to desired doneness: 1 ¾ - 2 ¼ hours for medium rare and 2 to 2 ½ hours for medium to well done. Remove from the oven when 5F below finished temperature
  5. Cover and let stand for at least 15 mins. Carve into thin slices
 
Serve with roasted potatoes, gravy, and steamed carrots

For this easy roast chicken dinner, ask your local butcher for 1 medium sized Free run, Free range, or Organic chicken
 

INGREDIENTS:
1 whole roasting chicken
2 Tbs Rick’s Rub Original seasoning
1 tsp olive or grapeseed oil
 
METHOD:
  1. Preheat oven to 375F
  2. Lightly coat chicken with 1 tsp oil and rub with 2 Tbs Rick’s Rub Original seasoning over entire chicken. Let sit for 10 mins
  3. Place seasoned chicken in roasting pan in preheated oven. Bake for 1 hour or until internal temperature reaches 165F
  4. Remove from oven and let rest for 10 mins, covered lightly with tented foil
 
Serve with couscous, sautéed zucchini, and a green salad

RICK'S RUB ORIGINAL NEW YORK STRIP STEAK

For this easy steak dinner, use New York Strip steak. It is a boneless cut from the short loin, known for its tenderness. Your local butcher can assist you with this choice cut of meat.
 


INGREDIENTS:
2 10-11oz New York Strip steaks
2 tsp Rick’s Rub Original seasoning
1 tsp cooking oil

METHOD:
  1. Heat skillet over medium heat. Add cooking oil when pan is hot
  2. Rub each steak with 1 tsp of Rick’s Rub Original seasoning and allow to stand for 10 mins
  3. Once oil is hot, place steaks in skillet and allow to cook about 4 mins per side, until internal temperature reaches 130F and the meat is a deep golden brown
  4. Remove steaks from skillet and put on platter under tented foil.  Let sit in 250F oven for 10 mins
 
Serve with roasted russet potatoes and Caesar salad

RICK'S RUB ORIGINAL MEATLOAF DINNER

For this easy glazed meatloaf recipe, ask your butcher for ground sirloin. It is a cut of meat from the upper part of the loin, just in front of the round




 
INGREDIENTS:
2lbs ground sirloin
2 Tbs Rick’s Rub Original seasoning
1 onion, chopped
2 celery ribs, chopped
2 garlic cloves, minced
1 green pepper, chopped
2-3 mushrooms, chopped
½ bunch parsley, chopped (optional)
1 egg
1 packet Rick's Real Foods Crispy Coaters ft. Rick's Rub Original
¼ cup tomato ketchup
 
METHOD:
  1. Preheat oven to 350F. Lightly grease 9x5 loaf pan or muffin cups
  2. Mix all ingredients, except ketchup, in a bowl until combined. Shape into a loaf and place into prepared pan. Spread ketchup over top of meatloaf
  3. Bake in the preheated oven for approximately 1 ½ hours or until internal temperature reaches 170F
 
Serve with mashed potatoes and steamed or roasted vegetables

RICK'S RUB ORIGINAL CHICKEN TENDERS

For this easy seared Chicken Tenders dinner, you will need 10 chicken tenders, which are found as part of the breast meat and are readily available at most meat counters. Chicken tenders are easy to make and taste great!
 

INGREDIENTS:
10 chicken tenders
1 Tbs cooking oil
2 Tbs Rick’s Rub Original seasoning
 
METHOD:
  1. Place chicken tenders in a bowl with 2 Tbs of Rick’s Rub Original seasoning. Toss to coat and allow to stand for 10 mins
  2. Heat frying pan over medium heat and add cooking oil to the hot pan
  3. Saute tenders until golden brown
  4. Serve hot
 
Serve with steamed green beans and boiled new potatoes

RICK'S RUB ORIGINAL GRILLED TOFU

For this easy grilled tofu dinner, you will need extra firm tofu.
 
INGREDIENTS:
14 oz block of firm or extra firm tofu (drained weight = 4oz)
2 Tbs Rick’s Rub Original seasoning
½ lemon
1 Tbs cooking oil
 
Prep for tofu:
  1. Slice open the package and drain out the water. Cut the block of tofu width-wise into eight ½” thick slices
  2. Lay a dish towel on a cookie sheet or tray; place paper towel on top of the dish towel.
  3. Spread the slices of tofu out in a single layer on the towels. Put more paper towel and another dish towel on top.
  4. Set another cookie sheet on top and set heavy objects on top, such as canned goods, cook books, etc.
  5. Leave the tofu for at least 30 mins to allow as much water out of the spongy tofu as possible. This will allow other flavours into the tofu!
  6. Once the tofu has released most of the water, you are ready to proceed with the recipe!
 
METHOD:
 
  1. Place drained tofu slices in a shallow dish and rub evenly with 2 Tbs Rick’s Rub Original
  2. Lightly oil preheated grill rack or pan
  3. Grill seasoned tofu over medium-high heat until lightly browned, 3 to 4 mins per side
  4. Squeeze juice from lemon over cooked tofu and serve immediately, topped with salsa
