SAUTEED GREEN BEANS WITH TOASTED ALMONDS AND RICK'S RUB HEAT

This simple side dish will liven up plain green beans and your family will always ask for more!




INGREDIENTS:
1 pound fresh green beans, trimmed (can substitute frozen)
1 Tbs cooking oil
1 tsp Rick's Rub Heat seasoning
small pat of butter
handful of sliced or slivered almonds
1 clove garlic, minced (optional)

METHOD:
  1. In a preheated saute pan, pour cooking oil and swirl around, coating the bottom of the pan
  2. Sprinkle 1 tsp of Rick's Rub Heat seasoning into hot oil and allow to cook to release flavour into oil. Turn down heat so seasonings don't burn
  3. Add green beans to pan and allow to brown slightly. Slowly add a bit of water to pan and cover to allow beans to steam. Once beans are tender, remove lid and allow liquid to evaporate
  4. Once liquid has evaporated, add butter, minced garlic, and almonds. Toss to incorporate and allow to cook until garlic is fragrant and almonds brown slightly
Serve as side dish to chicken, pork, beef, or fish
Serves 4

Rick's Rub Azteca Pork Chops

It's easy to get into a rut with pork chops. Try something new with Rick's Rub Azteca to wake up your tastebuds!




INGREDIENTS:
4 pork chops
2 Tbs Rick's Rub Azteca seasoning
1 recipe Sauteed Green Beans with Toasted Almonds and Rick's Rub Heat
boiled or steamed BC nugget potatoes

METHOD:
  1. Heat saute pan or grill to medium-high heat
  2. Rub each pork chop with 1/2 tsp Rick's Rub Azteca seasoning until coated
  3. Place each pork chop in pan or on grill to sear, then turn down heat to medium to allow to cook through. Remove pork chops from heat once cook through and allow to rest for 5 minutes
  4. Steam or boil fresh BC nugget potatoes until middle is tender

Serve with Sauteed Green Beans with Toasted Almonds and Rick's Rub Heat, and BC nugget potatoes

RICK'S RUB TUSCAN CHICKEN NOODLE SOUP

Use leftover chicken pieces to make this flavourful and hearty chicken noodle soup. A perfect meal for a rainy day or when it's time to clean out the fridge.

INGREDIENTS:
2-3 carrots, chopped
2-3 celery ribs, chopped
1 onion, cut into wedges
3-4 mushrooms, cut into bite-sized pieces (if desired)
5 cups low-sodium chicken broth
2 cups chicken, bite-sized pieces
1 cup dried short pasta
1 Tbs Rick's Rub Tuscan seasoning
1/2 Tbs Rick's Rub Original seasoning
optional: 1/2 cup fresh parsley, chopped

METHOD:
  1. In a large pot, saute carrots, celery, onion, and mushrooms, until tender and onions are translucent
  2. Add chicken broth to pot. Bring pot to a simmer and add chicken pieces
  3. Add Rick's Rub Tuscan and Rick's Rub Original seasonings to soup. Adjust seasonings to taste
  4. Add dried pasta while soup is lightly boiling and allow to cook until pasta is al dente
  5. Take soup off of the heat and stir in fresh parsley, if desired

Serve with fresh crusty bread

SLOW COOKER TUSCAN CHICKEN

Need a family-friendly weeknight meal? Use that slow cooker and Rick's Rub Tuscan!

INGREDIENTS:
4 chicken breasts
2 tsp Rick's Rub Tuscan
6 BC New potatoes
your favourite steamed vegetables

METHOD:
  1. Rub each chicken breast with 1/2 tsp Rick's Rub Tuscan seasoning and place in slow cooker liner
  2. Put liner into slow cooker and set on Low for 8 hours or High for 4 hours
  3. In a small saucepot, boil potatoes until tender in centre
  4. Steam a selection of your favourite vegetables

Serve Tuscan chicken breast, potatoes, and vegetables hot for an easy weeknight meal
