​Add the exotic flavours of Rick's Rub™ Moroccan to your classic Carrot Cake recipe. Cardamom, Ginger, Cloves, Coriander, and Allspice will elevate the familiar flavours and moist texture of this delicious cake, sure to please a crowd!





​INGREDIENTS:
Cake

2 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
4 tsp Rick's Rub™ Moroccan
1 cup vegetable oil
1 cup packed light brown sugar
1/2 cup granulated sugar
4 large eggs
1 tsp vanilla extract
2 cups shredded carrots
1 8-ounce can of crushed pineapple, drained
1/2 cup pecans or walnuts or raisins, optional

Frosting
1/2 cup butter, softened
1 8-ounce package cream cheese, softened
1 tsp vanilla extract
1 16-ounce package powdered sugar
2 tbsp heavy cream

Spice up your whole meal, including your butter, with your favourite Rick's Rub™ flavours!






INGREDIENTS:
1/2 cup unsalted butter, softened
1 Tbsp of your favourite Rick's Rub™ flavour, ex. Heat, Moroccan, Asian, Seafood, Lamb, Original, Tuscan

METHOD:
  1. In a bowl, mix softened butter with your chosen Rick's Rub™ dry rub flavour until thoroughly combined.
  2. Chill the mixture in a bowl in the fridge for 30 mins or until ready to use on baked potatoes, steamed vegetables, popcorn, and fresh dinner rolls!
Chef's Tip: transfer the softened, seasoned butter to a sheet of parchment paper and form into roll or other creative shape before chilling for an extra fancy touch to your dinner table!

Rick's Rub Moroccan Chicken Breast

Moroccan Chicken Breast

For an exotic and flavourful main course, use Rick's Rub Moroccan on your bone-in or boneless chicken breasts.







INGREDIENTS:

2-4 bone-in or boneless chicken breasts
1-2 tsp Rick's Rub Moroccan seasoning

METHOD;
  1. Preheat oven to 375F.
  2. Season each chicken breast with 1/2 tsp of Rick's Rub Moroccan, or to taste. Rub the seasoning into the meat for even coverage.
  3. Place chicken in an oven-safe dish and roast in 375F oven for 30-40 mins or until internal temperature reaches 165F. Allow chicken to rest for a juicy entree.
Serve with your favourite side dishes for a delicious meal. 

Pro Tip: If there are leftovers, chop chicken to add to salads, wraps, or sandwiches for lunch!

Rick's Rub Fajitas

Fajitas
Try Rick's Rub Moroccan seasoning in your fajitas! Same flavour profile as the Big Guy seasoning packets, without the guilt!

INGREDIENTS:
1 tsp cooking oil
1 lb chicken breasts or thighs, sliced
1 yellow bell pepper, sliced
1 red bell pepper, sliced
1 medium onion, wedges
1 Tbs Rick's Rub Moroccan, or to taste
Optional: 1 tsp Rick's Rub Heat for added spice

METHOD:
  1. Preheat large pan on stove, medium-high heat. Once pan is hot, add oil.
  2. Season the chicken slices with 1 Tbs Rick's Rub Moroccan. Toss to coat.
  3. Once pan is hot, add seasoned chicken slices and cook through. Remove from pan and add vegetables, allowing to saute until tender and caramelized.
  4. Add cooked chicken back to pan with vegetables and toss to combine. Cook for an additional 2-5 mins.
Serve with tortillas, sour cream, salsa, cheese, guacamole, and other fajita favourites.

French Fry Seasoning

​Try your favourite Rick's Rub seasoning on your french fries!
INGREDIENTS:
Favourite fresh or frozen french fries
Favourite Rick's Rub seasoning blend: try Moroccan, Original, Heat, Lamb, Asian, and Tuscan

METHOD:
  1. Cook french fries based on manufacturers instructions.
  2. Toss cooked french fries in a large bowl with your favourite Rick's Rub seasoning blend, to taste.

Moroccan Chicken Fajita Rice Bowl

​Need a quick weeknight meal? Or trying to clear out the fridge? This is the meal for you! 







INGREDIENTS:

3 bell peppers, sliced
1 onion, sliced
2 chicken breasts, thinly sliced
1 Tbs Rick's Rub Moroccan seasoning

METHOD:
  1. Preheat oven to 350F. On a well-greased sheet pan, place chicken and vegetables, lightly tossing with Rick's Rub Moroccan seasoning until evenly coated.
  2. Bake in oven 30-40 minutes or until cooked through. For a deeper flavour, broil for 2-3 minutes or until edges of peppers become slightly crispy.
​
Serve with rice, fresh avocado or your favourite fajita toppings, and a squeeze of fresh lime juice.

Moroccan Spiced Chicken Noodle Soup
Add some warm flavour to your canned soup this Fall with Rick's Rub Moroccan.

INGREDIENTS:
1 can of your favourite Chicken Noodle Soup
1 1/2 tsp Rick's Rub Moroccan seasoning, or to taste

METHOD:
  1. Prepare Chicken Noodle Soup according to package instructions
  2. Add 1 1/2 tsp of Rick's Rub Moroccan seasoning to soup and allow to simmer to blend the flavours
Serve with a slice of crusty bread or your favourite crackers

Rick's Rub Moroccan Spiced Oven Fries

Moroccan Oven Fries


Life is too short for boring fries! Spice up your oven fries with Rick's Rub Moroccan for an exotic twist on the ordinary.






INGREDIENTS:
3 medium russet potatoes
1-2 Tbs olive oil
1/2 Tbs Rick's Rub Moroccan seasoning

METHOD:
  1. Peel the potatoes and cut off the ends. Cut the potatoes into 1/4 inch thin slices
  2. Add fries to a large bowl and cover with cold water. Allow to soak for about 30 mins, to remove excess starch
  3. Once thoroughly soaked, drain, rinse and dry fries on paper towel covered drying rack
  4. Preheat oven to 400F. Blot fries with paper towel to absorb any excess moisture
  5. Line a baking sheet with parchment paper. In a clean, dry bowl, toss fries with oil and Rick's Rub Moroccan seasoning to coat
  6. Evenly line the baking sheet with fries in a single layer. Try not to overcrowd for even baking
  7. Bake for 30 mins, flipping once during baking. Increase heat to 475F and bake until edges are just turning crispy
  8. Sprinkle fries with extra seasoning, if desired

Serve immediately

MOROCCAN SHORTBREAD COOKIES

Try this delicious twist on your favourite shortbread cookies!







​INGREDIENTS:
1 cup unsalted butter, softened
3/4 cup icing sugar
1/2 tsp vanilla
2 cups all-purpose flour
2 tsp Rick's Rub Moroccan seasoning

METHOD:
  1. Beat together butter, sugar, vanilla, and Rick's Rub Moroccan seasoning until light and fluffy
  2. Mix in flour until combined
  3. Divide dough in half and shape into discs. Wrap each disc in plastic wrap and chill in the refrigerator until firm but not hard, about 45 mins
  4. Working with 1 disc at a time, roll out the dough between waxed paper to 1/3 inch thickness
  5. Cut out your favourite shapes with cookie cutters and place cut-outs on parchment-lined baking sheets, about 1 inch apart
  6. Chill baking sheets until firm, about 15 mins. Repeat with remaining dough
  7. Bake in 300F oven until pale golden, about 20 mins
  8. Let cool on pans on rack for 10 mins. Transfer to racks and let cool completely

Serve with hot chocolate
Makes 36 cookies

RICK'S RUB SAUCY MOROCCAN CHICKEN

Try this sweet, spicy, and saucy Moroccan chicken for your next potluck.
 




INGREDIENTS:
1 lb chicken wings or chicken breast in bite-sized pieces
½ cup flour
1 cup liquid honey
1 tsp soy sauce
1 heaping tsp Rick’s Rub Moroccan seasoning
 
METHOD:
  1. Preheat oven to 350F
  2. Place chicken and flour in a plastic bag, shaking to coat
  3. On a lined baking sheet, place chicken pieces evenly
  4. In a bowl, mix together honey, soy sauce, Rick’s Rub Moroccan seasoning and pour over chicken
  5. Bake in the oven for 1 hour
  6. Once cooked, baste with the sauce and allow to cool slightly
 
Serve warm at your next gathering
Serves 4
