Classic Shepherd's Pie with Rick's Rub™ Original

​When it's cold and dreary, or you're just trying to clear out some fridge space, make the ultimate comfort food: Shepherd's Pie!







INGREDIENTS:
1lb ground beef
1 onion, diced
2 carrots, diced
2 celery ribs, diced
1 yellow bell pepper, diced
2 mushrooms, diced
3-4 cloves garlic, diced
​1 tbsp Rick's Rub™ Original
1 can condensed mushroom soup 
2-3 large potatoes
butter
milk

METHOD:
  1. In a large skillet over medium heat, sauté ground beef until just a bit of pink left. Drain fat, then add onions to skillet to sauté until transparent. Add carrots, celery, yellow bell pepper, mushrooms and Rick's Rub™ Original seasoning to skillet and cook for 2-3 minutes. Add garlic and cook until fragrant, being careful not to burn. 
  2. Turn heat on skillet to medium low and add can of condensed mushroom soup and 1/2 can of water. Stir to combine and allow to simmer.
  3. In a large sauce pot, prepare the mashed potato topping by boiling potatoes until fork-tender. Once cooked, drain water and mash potatoes with butter and milk until desired consistency.
  4. Preheat oven to 375F.
  5. In an oven safe casserole dish, transfer beef filling and spread evenly. Carefully layer mashed potatoes on top of beef mixture and spread evenly to 1/2 inch from the edge of the dish. This gap will help keep the filling from overflowing onto the potatoes.
  6. Once the potato is spread evenly, place a few small pats of butter on top of the potatoes to help brown in the oven. Chef's Tip: sprinkle shredded parmesan cheese over potatoes for added texture and flavour!
  7. Place casserole dish in the center of the oven and bake until potatoes have browned slightly.

Serve hot and enjoy with a side salad.

Makes great leftovers, too!

MASHED POTATO CROQUETTES WITH RICK'S REAL FOODS™ CRISPY COATERS

Reinvent leftover mashed potatoes with Rick's Real Foods™ Crispy Coaters! Instead of reheating those boring potatoes, form into balls and coat with our Gluten Free crumb!






INGREDIENTS:
Leftover mashed potatoes, cold
Favourite fillings, such as chives, bacon bits, cheese, fresh herbs
Rick's Real Foods™ Crispy Coaters, any flavour

METHOD:
  1. In a medium sized bowl, mix cold mashed potatoes and fillings until combined
  2. Form potato mixture into walnut sized balls
  3. Roll each potato ball in Rick's Real Foods™ Crispy Coaters until evenly coated
  4. Bake or air fry until golden brown on the outside and soft and warm on the inside, about 10-15 mins at 375F

Chefs Tip: customize the fillings and coating flavour to match your meal. For example, add chopped basil and sundried tomato to the potato mixture and coat with Rick's Real Foods™ Crispy Coaters Coarse ft. Rick's Rub™ Tuscan

RICK'S RUB™ CUSTOMIZED COMPOUND BUTTER

Spice up your whole meal, including your butter, with your favourite Rick's Rub™ flavours!






INGREDIENTS:
1/2 cup unsalted butter, softened
1 Tbsp of your favourite Rick's Rub™ flavour, ex. Heat, Moroccan, Asian, Seafood, Lamb, Original, Tuscan

METHOD:
  1. In a bowl, mix softened butter with your chosen Rick's Rub™ dry rub flavour until thoroughly combined.
  2. Chill the mixture in a bowl in the fridge for 30 mins or until ready to use on baked potatoes, steamed vegetables, popcorn, and fresh dinner rolls!
Chef's Tip: transfer the softened, seasoned butter to a sheet of parchment paper and form into roll or other creative shape before chilling for an extra fancy touch to your dinner table!

Rick's Rub™ Heat Spiced Sweet Potato Fries

Add some sweet and spicy flavours to your kid-friendly sweet potato fries! Makes a great side dish that the whole family will love.







INGREDIENTS:
2-4 sweet potatoes, peeled and sliced into wedges
1 tbsp oil
1-2 tsp Rick's Rub™ Heat seasoning, or to taste

METHOD:
  1. ​Preheat your oven or air fryer to 400F
  2. Peel and slice the sweet potatoes into wedges. Be careful with the knife, sweet potatoes are tough to cut through!
  3. Place sweet potato wedges in a large bowl and toss with oil and Rick's Rub™ Heat seasoning, until sweet potato wedges are coated.
  4. Place seasoned sweet potato wedges on a baking sheet or in the air fryer basket and bake for 15-20 mins or until browned. Watch carefully, the natural sugars in the sweet potato will burn if cooked for too long!

Serve hot with a side of Rick's Rub™ Heat Dip!

French Fry Seasoning

​Try your favourite Rick's Rub seasoning on your french fries!
INGREDIENTS:
Favourite fresh or frozen french fries
Favourite Rick's Rub seasoning blend: try Moroccan, Original, Heat, Lamb, Asian, and Tuscan

METHOD:
  1. Cook french fries based on manufacturers instructions.
  2. Toss cooked french fries in a large bowl with your favourite Rick's Rub seasoning blend, to taste.

LEFTOVER TURKEY CAKES

Leftover Turkey Cakes
Tired of the same turkey dinner plate after the holidays? Try something new with this flavourful recipe using your favourite holiday flavours in a creative way!

INGREDIENTS:

1/2 onion, chopped
3 cloves garlic, minced
4 cups cold mashed potatoes
2 cups diced turkey
1 cup leftover stuffing
1 cup leftover vegetables, diced
2 tbsp Rick's Rub Original seasoning
1/4 cup flour

METHOD:
  1. Saute onion and garlic in cooking oil until onions are translucent
  2. In a large mixing bowl, combine onion mixture, mashed potatoes, turkey, stuffing, vegetables, and Rick's Rub Original seasoning
  3. Form mixture into balls and flatten to approximately 1 inch thick
  4. Put flour in a shallow dish and lightly coat patties on each side. Set aside patties on parchment paper until ready to cook
  5. Heat cooking oil in frying pan and carefully place patties in oil without crowding the pan. Cook on each side for 4-5 minutes, allowing a deep brown colour to develop
  6. Drain excess oil from patties on paper towel or baking rack. Serve hot

Serve with hot gravy or homemade cranberry sauce

Rick's Rub Moroccan Spiced Oven Fries

Moroccan Oven Fries


Life is too short for boring fries! Spice up your oven fries with Rick's Rub Moroccan for an exotic twist on the ordinary.






INGREDIENTS:
3 medium russet potatoes
1-2 Tbs olive oil
1/2 Tbs Rick's Rub Moroccan seasoning

METHOD:
  1. Peel the potatoes and cut off the ends. Cut the potatoes into 1/4 inch thin slices
  2. Add fries to a large bowl and cover with cold water. Allow to soak for about 30 mins, to remove excess starch
  3. Once thoroughly soaked, drain, rinse and dry fries on paper towel covered drying rack
  4. Preheat oven to 400F. Blot fries with paper towel to absorb any excess moisture
  5. Line a baking sheet with parchment paper. In a clean, dry bowl, toss fries with oil and Rick's Rub Moroccan seasoning to coat
  6. Evenly line the baking sheet with fries in a single layer. Try not to overcrowd for even baking
  7. Bake for 30 mins, flipping once during baking. Increase heat to 475F and bake until edges are just turning crispy
  8. Sprinkle fries with extra seasoning, if desired

Serve immediately

RICK'S RUB HEAT CHEESY POTATOES

Try this easy potato side dish when there is no time to make scalloped potatoes. Customize with different types of cheese or other seasoning flavours!



INGREDIENTS:
3 potatoes, thinly sliced
1 cup shredded cheddar cheese
1/2 tsp Rick's Rub Heat seasoning
splash of oil

METHOD:
  1. Preheat oven to 350F
  2. Rub cooking oil on baking sheet. Place slices of potato on baking sheet in an overlapping pattern
  3. Sprinkle Rick's Rub Heat seasoning over potatoes then cover with shredded cheddar cheese
  4. Bake in oven for 10 to 15 minutes or until potatoes are tender and cheese has melted

Serve with roasted chicken and steamed vegetables

GRATIN POTATOES

INGREDIENTS:
4 russet potatoes, ¼” slices
1 onion, sliced into rings
½ tsp nutmeg
3 Tbs butter
3 Tbs all-purpose flour
½ tsp salt
2 cups milk
1 ½ cups shredded parmesan, Monterey Jack, or Cheddar cheese
1 cup breadcrumbs
Salt and pepper to taste
 
METHOD:
  1. Preheat oven to 400F
  2. Butter a 1 quart casserole dish
  3. Layer ½ of the potato slices into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste
  4. In a medium sized saucepan, melt 3 Tbs butter over medium heat and mix in the flour and salt, stirring constantly with a whisk for one minute. Cook until mixture has thickened
  5. Stir in cheese all at once and continue stirring until melted, about 30 to 60 seconds. Pour cheese sauce over potatoes and top with breadcrumbs
  6. Cover dish with aluminum foil and back for 1 ½ hours in the preheated oven. Uncover for the last 10 mins of cooking time for a crispy topping.

RICK'S RUB TUSCAN ROASTED POTATOES

Potatoes can be boring. Give them new life by roasting them with Rick’s Rub Tuscan!



INGREDIENTS:
4 yellow-skinned potatoes, in 1 ½ inch pieces
1 ½ Tbs olive oil
1 to 2 tsp Rick’s Rub Tuscan seasoning
 
METHOD:
  1. Preheat oven to 350F
  2. In a large mixing bowl, toss potatoes, olive oil, and Rick’s Rub Tuscan seasoning until potatoes are evenly coated
  3. Transfer potatoes to a baking sheet and bake in the oven for 20 mins, or until golden brown. To ensure even browning, flip the potatoes halfway through the cooking time
 
Serve with main course.
