INGREDIENTS:
1/2 onion, chopped
3 cloves garlic, minced
4 cups cold mashed potatoes
2 cups diced turkey
1 cup leftover stuffing
1 cup leftover vegetables, diced
2 tbsp Rick's Rub Original seasoning
1/4 cup flour
METHOD:
- Saute onion and garlic in cooking oil until onions are translucent
- In a large mixing bowl, combine onion mixture, mashed potatoes, turkey, stuffing, vegetables, and Rick's Rub Original seasoning
- Form mixture into balls and flatten to approximately 1 inch thick
- Put flour in a shallow dish and lightly coat patties on each side. Set aside patties on parchment paper until ready to cook
- Heat cooking oil in frying pan and carefully place patties in oil without crowding the pan. Cook on each side for 4-5 minutes, allowing a deep brown colour to develop
- Drain excess oil from patties on paper towel or baking rack. Serve hot
Serve with hot gravy or homemade cranberry sauce
