For this easy roast chicken dinner, ask your local butcher for 1 medium sized Free run, Free range, or Organic chicken
INGREDIENTS:
1 whole roasting chicken
2 Tbs Rick’s Rub Original seasoning
1 tsp olive or grapeseed oil
METHOD:
- Preheat oven to 375F
- Lightly coat chicken with 1 tsp oil and rub with 2 Tbs Rick’s Rub Original seasoning over entire chicken. Let sit for 10 mins
- Place seasoned chicken in roasting pan in preheated oven. Bake for 1 hour or until internal temperature reaches 165F
- Remove from oven and let rest for 10 mins, covered lightly with tented foil
Serve with couscous, sautéed zucchini, and a green salad
