RICK'S RUB MOROCCAN SPICED PUMPKIN SEEDS

Have extra pumpkin seeds from your latest fall recipe? Try roasting for a delightful autumn snack.
 

INGREDIENTS:
Seeds from 1 large pumpkin, cleaned
1 tsp Rick’s Rub Moroccan seasoning
Oil to coat
 
METHOD:
  1. Boil cleaned pumpkin seeds in water for 10 mins to cook
  2. Drain and allow to dry
  3. Preheat oven to 375F
  4. Coat dry pumpkin seeds with oil and toss with 1 tsp Rick’s Rub Moroccan seasoning
  5. Spread seasoned pumpkin seeds evenly on a baking sheet and bake in oven for 10-15 mins or until golden brown
 
Enjoy as a healthy, high protein snack
Serves 2


RICK'S RUB MOROCCAN ROAST LEG OF LAMB

For this easy Roast Leg of Lamb dinner, ask your local butcher for 1 leg of lamb, about 6 lbs. The most important thing to remember about cooking a lamb roast is to not overcook. Lamb is so naturally tender and has such a wonderful flavor on its own, that it is bound to turn out well, as long as there is a little pink in the middle.
 INGREDIENTS:
1 leg of lamb, about 6 lbs
½ cup Rick’s Rub Moroccan seasoning
4 cloves of garlic, sliced
 
METHOD:
  1. Preheat oven to 350F
  2. Toss garlic slices in Rick’s Rub Moroccan seasoning
  3. Stud lamb leg with tip of a knife to create small pockets in the meat. Insert seasoned slices of garlic into pockets
  4. Rub the remaining Rick’s Rub Moroccan seasoning over leg of lamb to evenly coat and allow to stand for 10 mins
  5. Place leg of lamb into roasting pan and put into preheated oven. Cook for 1 ½ hours, basting occasionally, or until internal temperature reaches 145F
  6. Remove from oven and tent with aluminum foil. Allow to rest for 5 to 10 mins
  7. Carve roast and place meat in warmed serving dish. Pour pan juices over meat
 
Serve with roasted new potatoes and steamed broccoli
Serves 6 to 8


RICK'S RUB ORIGINAL ROAST BEEF DINNER

Get the classic roast beef flavour and beautiful gravy without the fuss of mixing spices. Serve this to your guests next Sunday!
 




INGREDIENTS:
2lb oven roast beef
2 tsp Rick’s Rub Original seasoning
 
METHOD:

  1. Preheat oven to 450F to oven-sear the roast
  2. Rub 2 tsp Rick’s Rub Original seasoning over whole roast, making sure to cover evenly
  3. Place roast in roasting pan into preheated oven for 10 mins
  4. Reduce heat to 275F and cook to desired doneness: 1 ¾ - 2 ¼ hours for medium rare and 2 to 2 ½ hours for medium to well done. Remove from the oven when 5F below finished temperature
  5. Cover and let stand for at least 15 mins. Carve into thin slices
 
Serve with roasted potatoes, gravy, and steamed carrots
Serves 4

RICK'S RUB ORIGINAL ROAST CHICKEN

For this easy roast chicken dinner, ask your local butcher for 1 medium sized Free run, Free range, or Organic chicken
 

INGREDIENTS:
1 whole roasting chicken
2 Tbs Rick’s Rub Original seasoning
1 tsp olive or grapeseed oil
 
METHOD:
  1. Preheat oven to 375F
  2. Lightly coat chicken with 1 tsp oil and rub with 2 Tbs Rick’s Rub Original seasoning over entire chicken. Let sit for 10 mins
  3. Place seasoned chicken in roasting pan in preheated oven. Bake for 1 hour or until internal temperature reaches 165F
  4. Remove from oven and let rest for 10 mins, covered lightly with tented foil
 
Serve with couscous, sautéed zucchini, and a green salad
Serves 4
